In summer, we reaaally like to slow things down and take it easy. That’s when we start to enjoy the simpler things in life, like this recipe for a popsicle cocktail. You just need two ingredients to make it─ so simple! Enjoy.

Champagne of your choice
Fruit flavored popsicle

Directions

Place popsicle in glass
Pour champagne over popsicle
Serve immediately

July 4th Sparkler

Serves 6

What You’ll Need:

3 ice cube trays
1 bottle of cranberry juice (at least 20 oz)
1 cup fresh blueberries
1 cup fresh raspberries
2 starfruits
1 sweet watermelon
Champagne

Directions

1. Make fruit ice cubes by filling 2 ice cube trays with raspberries and blueberries. Top off fruit with drinking water and place tray in the freezer to freeze.

2. Make cranberry ice cubes by pouring cranberry juice into a another ice-cube tray and freeze.

3. Slice starfruit into 1/2″ slices width-wise to create star shapes. Dice watermelon into 1″ cubes. Set aside.

4. Once fruit and cranberry cubes are frozen, alternate placing cranberry cubes, starfruit, fruit cubes, and watermelon into tall clear glasses to create a gradient effect. Fill each glass with champagne and enjoy!

Ready for a fresh taste? Try out this citrus infused cucumber mint cocktail for immediate rejuvenation.

INGREDIENTS

2 English cucumbers
1 cup fresh mint leaves
2 teaspoons sugar
4 oz vodka
2 oz Limoncello
Ice cubes

DIRECTIONS

Cut 4 thin spears from 1 cucumber, and set aside for garnish. Peel remaining cucumbers, cut lengthwise, and scrape out and discard seeds with a spoon. Chop cucumbers and puree in a food processor until smooth. Strain through a sieve and extract as much liquid as possible.

Fill a cocktail shaker with ice. Add mint, sugar, and limoncello, and shake. Add 1 cup cucumber juice and vodka, and shake. Strain into 4 glasses filled with ice. Garnish each with a cucumber spear.

Now sit back and get rejuvenated.

Cucumber Lemon Gin & Tonic

Ingredients
12 1/2-inch cubes Persian cucumber
1 tablespoon lemon juice (1/2 oz.)
4 tablespoons gin* (1 1/2 oz.)
1 tablespoon St. Germain liqueur or other elderflower liqueur (1/2 oz.)
1/3 cup tonic water, chilled
Cucumber spear

Directions
1. In a cocktail shaker combine cucumber and lemon juice; muddle until cucumber is broken up. Add gin, St. Germain, and ice. Shake until chilled, about 20 seconds. To serve, strain into a tall ice-filled glass. Top with tonic water. Garnish with a cucumber spear.
